Spinning Top-Inspired Chocolate Truffles

Ingredients

  • 200g chocolate, chopped
  • 50g vegetable fat (palm)
  • 50g whey powder (from milk)
  • 50g wheat flour (with calcium, iron, niacin, thiamin)
  • 25g wheat starch
  • 2 tablespoons glucose syrup
  • 1 teaspoon natural strawberry flavouring
  • Natural food colouring (optional)
  • Edible hundreds and thousands (sprinkles)

Instructions

  1. In a heatproof bowl, melt your chocolate of choice and vegetable fat together over a double boiler or in the microwave, stirring until smooth.
  2. In a separate bowl, combine the whey powder, wheat flour, and wheat starch. Mix well.
  3. Pour the melted white chocolate mixture into the dry ingredients. Stir until thoroughly combined and a smooth dough forms.
  4. Add the glucose syrup and natural strawberry flavouring to the mixture. Stir well to incorporate the flavours evenly.
  5. If desired, divide the dough into separate portions and add a few drops of natural food colouring to each portion. Mix until the desired shades are achieved.
  6. Roll small portions of the dough into bite-sized truffle balls using your hands. Place them on a parchment-lined baking sheet.
  7. Gently press a few edible hundreds and thousands onto the top of each truffle, resembling the colourful topping of spinning tops.
  8. If desired, melt a small amount of edible beeswax and brush it over the tops of the truffles for a glossy finish.
  9. Place the baking sheet in the refrigerator for about 1 hour, or until the truffles are firm and set.
  10. Once the truffles are fully chilled and set, transfer them to an airtight container for storage.
  11. Serve and enjoy these homemade Spinning Top-Inspired White Chocolate and Strawberry Truffles, with their delightful combination of creamy white chocolate and fruity strawberry flavours!

Note: You can store the truffles in the refrigerator for up to 1 week. Bring them to room temperature before serving for the best texture and flavour.
