This Marshmallow Bar Recipe is Inspired by Kingsway Marshmallows

Nannan is excited to share her newest recipe and bake, Marshmallow Bars inspired by Kingsway Marshmallows. Marshmallows are loved by us at Nannans, with Penny being particularly partial to a S’more over a campfire (supervised, of course!). Lots of our lovely customers also love Marshmallows, so Nannan decided to get creative!

Simple Recipes for Sweet Lovers

Serving Size: Dependent on the size of slices, approximately 14 bars dependent on your preferred slice size!

Time Required: 4 Hours. Preparation and baking will take approximately 25 minutes. Cooling and setting is really important in this recipe and will require 2-3 hours. Once chilled assembly and decoration will take a further 20 minutes.

Homemade Marshmallow Bars

Ingredients

  • 150g unsalted butter, plus extra for greasing
  • 300g digestive biscuits, crushed into crumbs
  • 300g marshmallows, chopped into smaller pieces
  • 150g white chocolate chips
  • 150g milk chocolate chips
  • 1 can (397g) sweetened condensed milk
Homemade Marshmallow Bar Squares
  1. Begin by greasing a rectangular baking pan (approximately 9×9 inches) with a bit of butter. Line it with parchment paper, leaving some overhang on the sides for easy removal.
  2. In a large saucepan, melt the 150g of unsalted butter over low heat. Stir gently.
  3. Once the butter is melted, remove the saucepan from the heat and stir in the crushed digestive biscuits until they are fully coated with the butter.
  4. Transfer the buttery biscuit mixture into the prepared baking pan. Use the back of a spoon or a spatula to press it down firmly to create an even layer. Place the pan in the fridge to set while you work on the next step.
  5. In a large mixing bowl, combine the chopped marshmallows, white chocolate chips, and milk chocolate chips.
  6. Pour the entire can of sweetened condensed milk over the marshmallow and chocolate mixture. Gently fold everything together until all ingredients are evenly distributed and coated with the condensed milk.
  7. Retrieve the pan with the biscuit base from the refrigerator. Pour the marshmallow and chocolate mixture over the biscuit base, spreading it out evenly. Use a spatula or the back of a spoon to smooth the top.
  8. Place the pan back in the refrigerator and let it chill for at least 2-3 hours, or until the bars have set completely.
  9. Once the bars are firm, use the parchment paper overhang to lift them out of the pan. Place them on a cutting board and use a sharp knife to cut them into squares or bars of your desired size.
  10. Your Marshmallow Bars are ready to be enjoyed! Serve the marshmallow squares as they are, or dust them with powdered sugar for an extra touch & enjoy this recipe inspired by Kingsway Marshmallows.
